- In a medium bowl combine the pineapple slices, maple syrup, cinnamon and salt. Heat a grill pan or sauté pan over medium-high heat and coat the pan with coconut oil.
- When the pan is hot add the pineapple slices and sauté until golden on both sides. Add the maple syrup from the bowl and simmer the liquid until reduced to a glaze, about 2 minutes. Remove the pan from the heat.
- Toast the English muffins and spread 1 tablespoon of nut butter on each side of the muffins. Top with the glazed pineapple and form sandwiches. Enjoy~
