CJG’s POWER BREAKFAST SANDWICH

Description

Changing the breakfast game!

Ingredients

    • 2 DOLE pineapple slices
    • 2 tablespoon pure maple syrup
    • 1/2 teaspoon cinnamon
    • 1/4 teaspoon salt
    • 1/2 teaspoon coconut oil
    • 2 cinnamon raisin english muffins
    • 4 tablespoon nut butter (peanut, almond, sunflower, etc.)
  • Method
    1. In a medium bowl combine the pineapple slices, maple syrup, cinnamon and salt. Heat a grill pan or sauté pan over medium-high heat and coat the pan with coconut oil.
    2. When the pan is hot add the pineapple slices and sauté until golden on both sides. Add the maple syrup from the bowl and simmer the liquid until reduced to a glaze, about 2 minutes. Remove the pan from the heat.
    3. Toast the English muffins and spread 1 tablespoon of nut butter on each side of the muffins. Top with the glazed pineapple and form sandwiches. Enjoy~
